Ingredients

  • 1 and a half cups of wheat flour
  • Half a cup of yellow cornmeal
  • 1 teaspoon baking powder
  • 1 cup granulated white sugar
  • Salt
  • 1 cup softened butter
  • 1 teaspoon vanilla extract
  • 5 large eggs
  • 1 glass of brandy or rum (optional)
  • 1/3 cup of milk

Preparation

Step 1. Mix

In a bowl, mix the flours, a pinch of salt and baking powder; With the help of a kitchen balloon, stir well. Now, in a mixer add the sugar and butter, until you get a light yellow dough. Add the eggs one at a time, the vanilla extract and half of the dry ingredient mixture you made in the previous step. Beat at speed Add the milk, and the last part of the dry ingredients. Before finishing mixing, take a spatula and lower all the flour that you have left in the container so that it is incorporated into the dough and add the rum or brandy if you wish. Beat again a bit.

Step 2. Bake

Take a container that resists the heat of the oven and apply butter and flour to prevent the shortbread from sticking. Place the well-spread mixture there so that it is uniform and take it to the oven (which must be preheated to 180ºC for about 15 minutes) for 30 or 35 minutes at a temperature of 180ºC.

Step 3. Serve

Once this time has elapsed or until you insert a knife and it comes out clean, remove the shortbread from the oven and let it cool for a couple of minutes; cut it later and it’s ready to eat. Bon Appetite.
