Ingredients

  • 200 gr of rice (if you can get the arborio type, better)
  • 1 and 1/2 liters of beef or chicken broth
  • One pound of mushrooms
  • 1/2 glass of white wine
  • Half a pound of Parmesan cheese
  • a big onion
  • A garlic
  • 15 grams of butter
  • Olive oil
  • fresh thyme
  • pepper to taste
  • Salt to taste

Preparation

Step 1. Cut

The first thing you should do is finely dice the onion. Now cut the mushrooms into even sized slices. Finally, crush a piece of garlic by crushing it with the blade of a knife. While you do this, heat the chicken or meat broth, you will need it later.

Step 2. Fry

Put a pan with olive oil over low heat and fry the garlic there for a few seconds and then remove it from the oil. Add the onion squares and fry until transparent; at that point, add the mushrooms and butter, mixing frequently. Season with pepper, thyme and salt to taste and stir the entire mixture again. Finally, add the white wine and allow the alcohol to evaporate for about 5 minutes, keeping the heat low.

Step 3. Cook

It is time for you to add the rice to this mixture. Pour it in and stir a little so that the ingredients are integrated. Now, add the chicken or meat broth by spoonfuls and mix each time you add one. It is a step that requires patience, because the fire must always be low and it will take between 15 or 25 minutes to cook, constantly stirring your rice and observing if it is soft or still hard. The way to know if your risotto is ready is to see that when you stir, it does not stick but rather feels loose and soft.

Step 4. Serve

Once your risotto has the desired consistency, add the Parmesan cheese and stir so that it is integrated and gives it its creaminess. Serve a good portion in individual plates and in case you love cheese, add a little to each portion on top. It’s time to savor it, bon appetite!
