Ingredients
- 1 pound of shrimp deveined and cleaned
- A cup of rice
- 2 cups of fish broth or water
- A diced carrot
- 1 big onion chopped into small squares
- 1 bell pepper chopped into small squares
- 2 tomatoes finely chopped seeded and peeled
- Half a long onion finely chopped
- 1/4 cup of green peas
- 2 tablespoons olive oil
- Two tablespoons of tomato sauce
- garlic powder
- Cumin
- Paprika
- thyme sprigs
- finely chopped coriander
- Annatto
- Salt and pepper
Preparation
Step 1. Blend
Pour the fish broth (or water) into the blender along with just a couple of shrimp and let them blend for a few seconds. You will have the base to cook your rice.
Step 2. Saute
In a frying pan, heat the olive oil and add the finely chopped long onion to fry for a few seconds. Later, also put the rice there and let it fry for a minute, stirring well. Add the broth you obtained in the previous step, half a tablespoon of salt and achiote to taste. Now, let the rice cook until it dries out. Once this happens, cover it and allow it to cook for 8 more minutes.
Step 3. Cook
While your rice continues to cook, in another pan add the carrot, the peas and add enough water to cover them; cover the pot and boil for 5 minutes. Use an additional pan or pot to pour olive oil and fry the big-headed onion, paprika and tomato there for two minutes. Mix all the ingredients well and season to taste with salt, garlic powder, pepper, cumin, paprika and a few sprigs of thyme. Once the stew has thickened a little, add the tomato sauce and stir so that the flavors are impregnated. At this point add the other shrimp to the stew, covering this pot and letting it cook for just 2 more minutes. To finish, add finely chopped coriander.
Step 4. Unite and serve
Add the cooked vegetables to the pot where your shrimp are with the sauce and do the same with the cooked rice. Stir everything very well so that the ingredients come together perfectly and that’s it, it will be time to serve this delicious rice with shrimp in individual dishes. Bon Appetite.
