Ingredients
- 1 6-7 pound bone-in, skin-on pork leg, shoulder, or loin
- 1 16-ounce bottle of beer
- A quarter cup of olive oil
- 2 tablespoons white vinegar
- 1 medium white onion cut into chunks
- 4 long onion stalks cut into chunks
- 8 cloves of garlic
- 1 teaspoon dried oregano
- 1 teaspoon of thyme
- 3 teaspoons cumin powder
- 1 and 1/2 teaspoons of color
- Salt and pepper to taste (Usually 1 teaspoon salt and 1/2 teaspoon pepper per pound of meat)
Preparation
Step 1. Prepare marinade
The first thing you should do is mix all the ingredients (except for the pork, obviously) in a processor or blender. Process until the point where all the ingredients are well blended and you have obtained the consistency of a traditional marinade.
Step 2. Marinate
Take the pork to a large enough container, take a knife and make some holes in the meat of the pork on all sides. Then, with the help of a spoon, add the marinade keeping in mind that the entire leg is well covered by this marinade. Add the rest of the marinade on top to cover the meat. Cover the pork with kitchen plastic and refrigerate it for 1 or 2 days. Every 8 hours, turn the meat over to continue impregnating it with the marinade.
Step 3. Bake
Preheat the oven to 160 degrees Celsius and remove the pork from its wrapper to leave it on a baking sheet for 30 minutes. Add the remaining marinade in the tray where it was previously and cover everything with aluminum foil. Bake from 4 to 7 hours depending on the size of the pork. Approximately every 40 minutes, bathe the meat with the marinade that continues to release the cooking so that the meat does not dry out. Finally, remove the aluminum foil during the last hour of cooking so that the pork browns on top.
