Ingredients
- 1 egg
- 1 cup whole wheat flour
- 400 ml of skim or vegetable milk
- 1 teaspoon olive oil
- 1/2 cup grated coconut
- Fruits of your choice (to fill)
- jam without candy
Preparation
Step 1: Mix
Add the egg, flour and milk to a bowl and mix using a mixer until smooth. If you prefer, you can also blend them.
Step 2: Heat the oil
Heat the olive oil in a skillet over medium heat until hot.
Step 3: Pour the mixture
When the oil is hot, pour the mixture into the pan in a circular motion to spread the mixture evenly. Let each side of the crepe cook for 3 minutes over medium heat.
Note: If you have a larger griddle or pan you can make various sizes and shapes, be creative!
Step 4: Fill the crepe
Remove the crepe from the pan and fill it with the fruits of your choice and the jam. Later fold the crepe in half and decorate with the coconut scratch. Enjoy it!
