How to make onion focaccia?

Our head chef at Vibra, Stefano Beruschi, took on the task of preparing this recipe step by step, from the dough, so that you can also make it at home.

Ingredients

  • 500g wheat flour
  • 275g of water
  • 5g fresh yeast (or dry baker’s yeast)
  • 11g of salt
  • olive oil to taste
  • 20g red onion, finely chopped

Preparation

Step 1: Dissolve the yeast

Dissolve the fresh yeast in the water.

Step 2: Add water and mix

Put the flour in a bowl, gradually add the water to the flour and mix by hand or with a wooden spoon.

Step 3: Keep mixing

Once all the water has been incorporated, keep mixing until the flour has absorbed all the water.

Step 4: Add the salt and knead

Add the 11 g of salt and knead until the dough absorbs it.

Step 5: Add oil and knead

Add the olive oil and continue kneading until the dough absorbs all the oil.

Step 6: Cover the dough

Cover the dough with plastic wrap and let it rest for 2 hours, at the temperature.

Step 7: Refrigerate the dough

Store the bowl in the fridge for 24 hours.

Step 8: The next day

Take the dough out of the fridge.

Step 9: Preheat the oven

Preheat the oven to 220 degrees Celsius or if you can more (240), putting a tray with water to create humidity.

Step 10: Roll out the dough

On a work surface, spread the dough; give it a rectangular or round shape, depending on the container you have available.

Step 11: Grease the Tray

Grease the tray where the focaccia will be cooked with olive oil.

Step 12: Let the dough rest

Put the dough in the tray and let rest for 1 hour to the climate.

Step 13: Add the onion

After the hour has elapsed, put the onion on top of the dough and finish with a little olive oil. You can use other vegetables, such as olives and dried tomatoes.

Step 14: Bake

Put in the oven and cook for 20-25 minutes.

Step 15: Let cool

Remove from oven, let cool slightly; cut and enjoy still hot.
