Ingredients

  • 1 pound of red tomatoes
  • 1 medium onion
  • A garlic clove
  • One teaspoon of dried oregano
  • 1 teaspoon dried basil
  • fresh basil leaves
  • A cup of extra virgin olive oil
  • a bit of baking soda
  • Salt to taste
  • pepper to taste

Preparation

Step 1. Cut

The first thing you should do is cut each of the tomatoes in half (do not remove the peel). Then do the same with the big-headed onion and the garlic cloves.

Step 2. Scratch

With the help of a grater, proceed to grate each of the tomato halves in a bowl and repeat this action with the onion pieces.

Step 3. Sauté and cook

As soon as the oil reaches temperature, add the mixture of grated tomatoes and onions. Now, season with salt and pepper to taste, add the dried oregano and basil. Finally add a pinch of baking soda and mix to integrate everything. Cover the pan or pot and let it cook over medium heat for 25 or 30 minutes, stirring constantly so that it does not stick.

Step 4. Serve
