Ingredients

  • 1 kilo of yam
  • 250 grams of coastal cheese cut into cubes
  • A unit of red onion chopped into feathers
  • Four finely minced garlic cloves
  • Juice of 1 lemon
  • 4 tablespoons of coastal whey
  • Bleached leaves (optional)
  • Water
  • Oil

Preparation

Step 1. Peel and chop

Take the yam, peel it and chop it into not so big pieces. Also, peel the onion and chop it into feathers.

Step 2. Cook

In a pot, put enough water and when it is boiling, add the yam pieces to cook; lid to better conserve steam. The yam will release white coloration to the water. Stir occasionally to prevent sticking.

Step 3. Sauté

In a frying pan, pour a splash of oil and when it has taken temperature add the chopped onion. Place the minced garlic right there and fry until the onion is transparent.

Step 4. Mix and serve

Put the fried yams, onions and garlic in the pot where you are boiling. Once the yam has loosened up a bit and the broth looks thick, add the whey, the costeño cheese, the bleo leaves chopped into strips (optional, if you don’t have them, nothing happens), the lemon juice and level the salt flavor. Stir very well so that all the ingredients are mixed and let it come to a boil; at that moment you can turn off the pot and serve this delicious mote of cheese in deep dishes (like those of a soup).
