Ingredients

  • 1/4 of big onion finely chopped
  • A clove of garlic finely chopped
  • 2 tomatoes, chopped
  • Two carrots, diced
  • A diced potato
  • 1 cup raw lentils
  • A diced zucchini
  • A cup of chopped spinach
  • Two tablespoons of finely chopped coriander
  • A teaspoon of turmeric
  • a tablespoon of oil
  • Salt and pepper to taste
  • Water

Preparation

Step 1. Saute

Pour the oil into a pot and let it heat. Then, add the big-headed onion and let it fry for about 3 minutes. Add the garlic, tomato, carrot, potato and raw lentils. Season with turmeric, salt and pepper to your liking. Stir all these ingredients very well and allow it to cook for 1 more minute.

Step 2. Add

Add enough water to form the soup and bring the pot to a boil over high heat. Once it starts to boil, cover it and lower it to medium heat, letting it cook for another 30 minutes. After this time, add the zucchini and check that the lentils are soft. If so, immediately turn off the heat and add the spinach and cilantro to the soup.

Step 3. Serve
