Ingredients

  • 1/2 lb beans
  • A diced tomato
  • 1 big onion diced
  • 2 branches of long onion finely chopped
  • Two finely minced garlic cloves
  • A carrot cut into three or four pieces
  • 180 grams of diced bacon
  • 5 sausages in pieces
  • 250 grams of pork rinds
  • Half a cup of bbq sauce
  • Salt, pepper and color to taste

Preparation

Step 1. Cook

The first thing you should do is cook the beans in the pressure cooker with enough water (you must have left them soaking since the night before). Add a piece of big-headed onion and cook for 40 minutes or until the beans are soft. After this time, carefully open the pot and add the carrot pieces and salt to taste. Put the lid back on and let them beep for about 15 more minutes.

Step 2. Mix

Put a skillet over medium heat and pour the bacon; once it is golden, take it out. In that same fat, fry the sausages and when they are golden brown, remove them. Also fry the chicharrón and reserve it. Right there, see the onion and tomatoes. Season with salt, pepper and color, in addition to the bbq sauce; mix very well so that the flavors integrate. Add the bacon and sausage to the stew and stir again. Take all this sofrito and pour it into the beans so that they get all the flavor. You can remove a little of the broth from the beans and meat to blend it, and return it to the preparation to gain thickness.
