Ingredients
- 1 gallon (approx. 3.5 liters) whole milk
- Between 60 and 120 ml of lemon juice or white vinegar
- Salt to taste
- 1 cheesecloth for cooking
Preparation
Step 1. Mix
The first thing you should do is pour the milk into a large pot and heat it over medium heat and when it is about to boil, add either the lemon juice or vinegar, stir and immediately remove it from the stove. Put it on a table and cover the pot for about 20 minutes so that the whey separates from the rennet. Take another pot, put a colander and put the cooking gauze on top, this will be a filter. Start straining all the liquid, you will only need the rennet (What remains in the gauze. Make a kind of ball and squeeze this gauze to completely dry the rennet; if you wish, hang this gauze from the dishwasher faucet to finish draining for a few 30 minutes.
Step 2. Refrigerate
After this time, the cheese will have formed in the cheesecloth. Now, you will need to pour it into an airtight cup or container. Season with salt to taste and stir to mix perfectly. Cover the container, take it to the refrigerator overnight and voila, you can eat it all! Bon Appetite.
