How to make Colombian stuffed potatoes

Ingredients
- 5 large potatoes
- 1 pound ground beef
- 2 ripe tomatoes, peeled and diced
- 1 minced garlic clove
- 1 boiled egg
- Half a cup of cooked white rice
- 1 cup of oil
- 1 egg
- half a cup of milk
- Half a cup of wheat flour
- Salt
- Half a teaspoon of cumin
Preparation
Step 1. Cut
The first thing you should do is peel the potatoes and cut them into cubes. Then take them to a pot with water that covers them and put them over low heat with a little salt. Leave them there until they are completely cooked, when you see that they are ready, remove the water and pickle the potatoes until they are like a puree.
Step 2. Mix
While the puree rests and cools, it’s time to prepare the filling. That is why in a pan you must mix the ground meat, the tomatoes, the garlic, the cumin and add salt to taste. Simmer this until the meat has cooked all the way through. Then add the rice and the boiled egg to the mixture and stir all the ingredients very well.
Step 3. Assemble
Then you have to take a quantity of the mashed potatoes to form a kind of balls and you must make a hole with your finger to incorporate the meat filling. Then cover the hole with a little more puree making sure it is well covered. Repeat the same step until you run out of all the ingredients.
Step 4. Fry
Once you have all the balls ready, in a different container put the raw egg, the flour, the milk, a little salt and stir very well. Then you will have to introduce the potato balls one by one and then take them to a pan with hot oil. Let them fry and when you see them completely golden, it will be time to remove them and remove the excess fat with kitchen towels.
Step 5. Serve
Then it will be the perfect moment to enjoy this delicious recipe, remember that you must serve them immediately so that they do not lose that crispy touch and you can accompany them with chili, cream cheese, guacamole or different sauces.
