Ingredients

  • 1 pound of pork hoof
  • 1 pound cargo beans
  • a bay leaf
  • Two finely minced garlic cloves
  • Water
  • 1 green banana cut into chunks
  • Half a large carrot
  • Salt pepper

Preparation

Step 1. Saute

In the pressure cooker, pour a splash of oil and add the pig’s hooves to fry over medium-high heat for about 5 minutes. Also add the bay leaf and finely chopped garlic. After the time for this little sauce, add the beans to the pot (remember having left them in water the night before), stir all the ingredients very well.

Step 2. Add

Now, add the pieces of banana, the whole carrot, salt, pepper and the dressings that you like the most. Add enough water to the pot to cover the beans and cover the pot. Allow the pot to come to pressure and lower the heat to medium low to let it cook for about 25 more minutes. After this time, carry out the process to let all the steam escape from the pot and open it later.

Step 3. Blend

Remove the hoof pieces and let them cool. Meanwhile, take the carrot along with a cup of beans (the ones you cooked together with the same cooking water) and pour into the blender. Process for a few seconds and add this mixture to the beans you have in the pressure cooker. If you wish, remove the meat from the hooves or add them back to the pot with everything and bone.
