Ingredients

for the meat

-1 kg of silver beef

-1 liter of red wine

-1 onion

-1 red bell pepper

-2 cloves of garlic

-50 grams of sugar

-1 tomato

for the potatoes

-1 kg of potatoes

-1 pack of parsley or coriander

-400 gr of serrano ham

-100 ml of olive oil

Preparation

First of all we must clean the silver removing the excess fat on both sides and heat the oil in a pot, to seal the meat.

Then the red wine is added until the alcohol evaporatesto later incorporate the onionthe peppersthe cloves of garlic and 50 g of sugar, plus the chopped and shelled tomatoes.

Cook at least 35 min pressure cooker either 1 hour and 15 minutes in a normal pot.

Once the meat is soft, it is removed from the juice.

You have to wait for the liquid to cool down to later pass it through the juicer and there form a sauce to accompany our silver.

for the potatoes, cut them with skin, in quarters and cook them with cold water. Leave al dente.

Once they are ready, cool and at the same time heat the pan with olive oil and minced garlic.

Finally, the potatoes are added and browned, so that the final step is to sprinkle cilantro on top.

Finally, for the serrano hamcut and put in the oven or microwave for a few minutes, until the crispness we expect is obtained.
