Cakes are probably one of the most versatile and delicious desserts in the kitchen of any country.
They are delicious, nutritious, they can be mixed with jam or sweet, or pastry cream, and with whatever you can think of. In addition to that they can be made in many flavors and add fresh fruits or nuts.

How to make an exquisite yogurt cake
1 1/2 cup (210 grs) of all-purpose flour, EYE: no baking powder
1 cup vanilla-flavored yogurt or plain yogurt
1 cup of sugar
1 tablespoon lemon zest
2 teaspoons of baking powder
1/2 cup of oil
2 eggs
1 pinch of salt
1 small spoonful of vanilla essence
Preparation
The first thing is to preheat the oven to 180°C (350°F).
Then you have to butter the mold very well.
In another bowl mix the sugar with the lemon zest. To this last mixture add the yogurt, oil, 2 beaten eggs and the vanilla essence. Integrate everything very well. Then gradually add the dry ingredients.
Then in a bowl you have to mix the dry ingredients, that is, the flour, the baking powder and the salt.
Once the above is done, you have to pour the mixture inside the buttered mold.
Now the mixture is ready to bake for about 30-35 minutes when using a round pan with a center hole, or 45-50 minutes when using a rectangular pan.
Once the time has passed, check if the dough is ready by inserting a wooden stick into the cake. If it comes out clean it means it’s OK.
Once it cools you can disassemble it and cut it.
NOTE: If you leave it well wrapped, it keeps very well for several days.
