This dessert has come out of one of my deepest memories. My aunt Soledad, who is actually a great-aunt, was an expert confectioner, well into her years. Many of the birthdays celebrated in Anolaima, my town, were sung around a cake that had come from her hands.
However, the ponqué was not his best recipe. for me the floating island dessert It was the glory, not only because it was delicious, but because to my childish mind, its preparation was more mysterious than a secret potion. How could eggs, cream, and sugar turn into cloud-like islands that actually floated on top of a sauce?

Ingredients to make the floating island dessert
- 250ml milk
- 250ml milk cream
- 50ml vanilla essence
- 100g white sugar
- 2 tablespoons caramel sauce
- 2 eggs
- 1 orange cut into slices
Worcestershire sauce preparation
Step 1: Heat
Add to a saucepan over medium heat: milk, cream and vanilla. Stir constantly until hot. Then leave the mixture on low heat.
Step 2: Separate and blend
Separate the yolk from the white of the eggs. Set aside the whites in another container to use them in another step of the recipe and proceed to beat the yolks very well.
Step 3: Add
Add the beaten egg yolks and sugar to the mixture of milk, cream and vanilla. Continue whisking constantly until thickened, turn off heat and let cool.
Step 4: Strain
When the mixture is cold, pass it through a strainer and let it rest.

Step 5: Beat the egg whites
Beat the egg whites with sugar very well, until you get the point of snow.
Step 6: Boil
Add the orange slices to a pot with enough water and bring to a boil over medium heat; when it is boiling, add the mixture of egg whites by tablespoons. Cover the pot and after five minutes take your floating islands out of the water.
Step 7: Serve and enjoy
Serve a little Worcestershire sauce in a deep dish, then place three floating islands on top of the sauce and add caramel sauce to taste.
