Ingredients

  • 250g mascarpone cheese
  • 3 eggs
  • 4 tablespoons of sugar
  • 15 sweet floury white dough cookies (lady’s fingers)
  • 200 ml cold brewed coffee
  • A glass of rum, coffee liqueur or amaretto
  • Cocoa powder without sugar
  • Salt

Step 1

Separate the yolks from the whites of all the eggs.

Step 2

Mix the yolks with the sugar and beat until you get a white and foamy cream.

Separately, put the mascarpone in a bowl and beat by hand or with a mixer, until smooth. Slowly add the mixture to the egg and sugar cream from the previous step. Stir vigorously.

Step 4

Pour half a glass of liquor and mix until you get a thick cream. Store this cream in the fridge.

Meanwhile, put the egg whites and a pinch of salt in a deep bowl and beat until stiff. Then add it to the cream you have in the fridge; do it slowly with a kitchen spatula, making wide circular movements. It doesn’t matter if you have lumps left, the important thing is that the egg whites don’t lose their snow point. Refrigerate again.

Meanwhile, in a deep plate mix the cold coffee and the rest of the liquor. If you are assembling the tiramisu in a large container, leave the cookies whole; if you are going to assemble it into individual portions, break them into small pieces.

Soak the cookies in the coffee, drain them to remove excess liquid and assemble the first layer of tiramisu. Then put on top a layer of the cream that you have refrigerated, then another with more cookies and finish with cream. Decorate by sprinkling cocoa powder.
