Ingredients for the changua with the traditional recipe

  • 1 liter of milk
  • A packet of toast (calaos can also work)
  • 4 eggs
  • coriander sprigs
  • Scallion
  • Salt

Preparation

Step 1. Boil

In a saucepan, bring the milk to a boil. In case you want to soften the flavor of the milk a little, you could add a little water. Immediately add the finely diced onion and the cilantro, also finely chopped.

Step 2. Add

When you see that the milk is going to start to boil, open the eggs (as you do when you want to fry them) and add them to the pot. Stir very gently so as not to break the eggs.

Step 3. Go

Once the milk begins to boil, break the toast (or calaos) into pieces and add them to the pot, stirring a little so that they integrate with the other ingredients. Let boil for about 4 more minutes so that the eggs are fully cooked.

Step 4. Serve

Serve your changua in a deep plate or a casserole. If you wish, add more chopped cilantro on top. And now to taste this delicacy.
