The caesar salad recipe offered in restaurants is nothing like the original recipe. The story goes that back in the 1930s, the chef at César’s Place (Mexico), surnamed Cardini, prepared this salad for some hungry aviators who arrived at the hotel when the kitchen was already closed.
He made what he could with the ingredients he had on hand, remembering an old recipe from his Italian mother. The result was the most famous salad in the world.

Caesar salad ingredients
- 1 tablespoon and a half of anchovies
- Olive oil
- 1 finely minced garlic mixed with olive oil
- One tablespoon of dijone mustard
- 1 egg yolk
- 1/2 lemon
- Pepper
- 2 tablespoons Parmesan cheese
- 12 romaine lettuce leaves
- 3 bread croutons
Preparation
Step 1: Add the ingredients
Add the following ingredients to a wooden container or bowl: anchovies, minced garlic in olive oil, mustard, egg yolk, pepper to taste, Worcestershire sauce and the juice of half a lemon.
Step 2: Mix
Mix all the ingredients evenly so that everything is well integrated.
Step 3: Add olive oil
Add a thin stream of olive oil with a dispenser and continue mixing.
Step 4: Add the Parmesan cheese and lettuce
Add a tablespoon of Parmesan cheese and the lettuce leaves to the mixture; mix everything very well.
Step 5: Serve
Serve on a plate 4 leaves of romaine lettuce previously mixed with the dressing and place a bread crouton on top. Enjoy!
