Ingredients

  • One pork rib (about 1 1/2 or 2 lbs. each)
  • 1 tablespoon of white sugar and a brown sugar
  • a tablespoon of paprika
  • 2 teaspoons of black pepper
  • One teaspoon of chili pepper powder
  • 1 teaspoon cumin powder
  • 3 cups of barbecue sauce of your choice
  • Salt

Preparation

Step 1. Mix

Put the white and brown sugar, paprika, black pepper, chili powder, cumin powder and salt in a bowl, and mix with the help of a spoon or a kitchen balloon until all these ingredients are fully integrated.

Step 2. Arrange and season

Place your ribs with the bones facing up and with the help of kitchen paper, remove the white membrane that covers the entire area. Later, put the rib on a baking sheet. This tray should be lined with aluminum foil and greased with a little oil on all sides. Now pour half of the spice mixture you made in the previous step over the rib, trying to cover them fairly well. Flip the ribs over and cover the other half with the remaining spices.

Step 3. Bake

Now line the ribs with aluminum foil (they should be covered) and keep them in the fridge for about 4 hours if you like. Otherwise, with about 20 minutes that you let them rest at room temperature, they will have already absorbed the spices well. Take them to the oven for 2 hours, at about 150ºC. Optionally, every 20 minutes, you can add BBQ sauce on all sides with a kitchen brush or with the help of any utensil you have on hand and that will serve you for this purpose. If you don’t have an oven, you can fry them in a pan first over medium-low heat so that they cook completely inside and then turn up the heat so that they caramelize on the outside.

Step 4. Serve

When you take your ribs out of the oven, they will be juicy. You can put them on a grill for about 15 more minutes to sear them or serve them right away, there’s no mess. Cut the ribs into pieces and bathe them with the BBQ sauce and voila, they will be ready to delight the most gluttonous!
