Ingredients

  • One chicken breast with the bone aside
  • 1 long onion
  • fresh cilantro to taste
  • Half a pound of mushrooms cut into slices
  • 3 tablespoons of wheat flour
  • 1 teaspoon paprika
  • 1 cup of heavy cream
  • Parmesan cheese to taste
  • 3 tablespoons of butter
  • Salt and pepper to taste
  • 4 cups of water
  • 1 teaspoon of oil

Preparation

Step 1. Cook the chicken

In a large pot or pan put the four cups of water, the chicken breast, the bones of the same, the onion and the cilantro. Cook covered until chicken is white. Don’t throw the broththat you will need it.

Step 2. Sauté the mushrooms

Separately, fry the mushrooms in the oil over medium heat; lower the flame and integrate the butter; cover so that the mushrooms release all their juice. Then pour over them the 3 tablespoons of wheat flour and stir until you get a brown color.

Step 3. Add the broth

Discard the bones, onion, and cilantro, and add the chicken broth (strain if desired), heavy cream, and paprica to the mushrooms. Salt and pepper to taste.

Step 4. Cut the breast

Separately, cut the breast into bite-sized pieces.

Step 5. Add the breast and cook

Add the brisket and Parmesan cheese. Stir very well. Let cook for 10 minutes, covered and over low heat. And ready!
