  • 2 liters of whole milk
  • 40 ml lemon juice or vinegar

Step 1. Pour

The first thing you should do is pour the milk into a pot. Take it to the fire until it is lukewarm; do not let it boil because it will lose properties necessary for this recipe. Remove it from the stove when the milk has released some bubbles on the sides. Also, at that time, add the lemon or vinegar and stir very well. Let stand until they separate (until the milk is curdled).

Step 2. Strain

Now you need to strain the milk. Put a bowl below and the strainer on top. It is important that you place a soft cloth over the strainer so that it filters the milk and the curdled pieces that have formed very well. Pass the cheese with a soup spoon. Take all that cheese left on the cloth and put it in a food processor or blender. Blend and add a little of the whey that was strained in the bowl to hydrate.
