Ingredients

  • 2 cups long grain white rice
  • A cup of red beans
  • 4 or 5 pieces of bacon
  • four cloves of garlic
  • 1 onion
  • 1/4 red or green bell pepper
  • Half a teaspoon of cumin
  • 1/2 teaspoon oregano
  • a bay leaf
  • Salt to taste
  • Vegetable oil

Preparation

Step 1. Soften

The first thing to do is soak the beans overnight. The next day, you can put them in a pot with water to whistle for about 20 or 25 minutes so that they are soft but complete. Finally, reserve them to continue with the preparation and keep in mind not to throw away the water that resulted from this process.

Step 2. Saute

Chop the paprika into cubes, the onion into feathers, the bacon into cubes and the garlic finely. In a skillet, heat oil or butter over high heat and pour the bacon there so that it browns and then the other ingredients. Let cook for about 3 minutes, stirring constantly. At that time, add a cup of rice to the pan and mix it very well with all the other foods. Once the grains of rice are transparent, pour two cups of the water that resulted from cooking the beans. Then add the beans and stir everything very well. This will be the time to taste for salt and add a little if you need it. Also add the oregano and cumin. Let everything cook for 5 more minutes over medium-high heat; then cook for 15 more minutes over low heat to thicken.

Step 3. Stir and serve

Once the rice is cooked, turn off the heat and leave the rice uncovered for about 10 minutes. After this time, gently stir the rice with the help of a wooden spoon so that it becomes unstuck. Once it is loose, it will be time to serve it in individual portions or in a container so that everyone can take the amount they like. Bon Appetite.
