Ingredients

  • 2 pounds of beef tenderloin cut into pieces
  • 3 medium peeled potatoes
  • 2 small ears of corn, cut into chunks
  • a green banana
  • 4 pieces of yucca
  • 1 carrot
  • Half big white onion, diced
  • A diced tomato
  • Two small bell peppers, diced
  • 3 finely minced garlic cloves
  • 2 tablespoons coriander
  • Seasonings such as color, cumin, pepper or whatever you want
  • 2 tablespoons vegetable oil
  • Salt to taste
  • Water

Preparation

Step 1. Saute

Put in the pressure cooker over medium high heat on the stove and pour the vegetable oil into it. Once it takes temperature add the onion, garlic, salt, peppers, tomato and a little coriander. Also add the seasonings that you like the most and a little color; Stir very well so that the flavors are integrated. At that same point, add the meat and mix so that they are covered with the sauce you are making. Immediately put the carrot in the pot and let all this cook for another 2 or 3 minutes.

Step 2. Cook

Now, add enough water to assemble the soup. Also put the pieces of cob, the green plantain and cover the pot once. Allow it to beep and after that, leave about 10 more minutes for the harder ingredients to soften. After this time, get all the air out of the pot to be able to open it. Add the potato to the cooking together with the cassava and let everything boil for another 15 minutes.

Step 3. Check and Serve

Once the time mentioned in the previous step has elapsed, touch the potato, cassava, cob and banana (the hardest ingredients) and check if they are soft. If so, it will be the right time to serve this delicious dish. Remember that if you must leave the stew for a few more minutes, you could add a little water in case the liquid has been reduced.
