Aubergines parmesan, a «molto italiano» recipe

Ingredients

  • 2 small aubergines cut into slices
  • 400 g tomato puree (tomato paste)
  • 1 clove garlic
  • Basil leaves
  • 400 g of mozzarella cheese
  • 100 g grated Parmesan cheese
  • 2 cups of oil for frying
  • 2 tablespoons olive oil
  • 5 to 10 g of salt
  • 100 g of wheat flour

Step by Step

Step 1: Preparation of the aubergines, remove the bitterness

On an oven rack put the aubergine slices and add salt. Cover the aubergine slices with kitchen paper and place a heavy object on top so that the aubergines remove the bitterness; the weight can be with a tray and a plate. Leave for 30 minutes.

Step 2: Prepare the tomato sauce

Put the olive oil, the garlic clove, the tomato puree and some basil leaves in a pan; then let it cook over low heat for about 10 minutes and stir the sauce.

Step 3: Fry the aubergines

Heat the oil over medium heat in a skillet. Pass the aubergines in the flour and add them to the pan until golden brown. Take them out and let them drain on a plate with absorbent paper to remove excess oil.

Step 4: Preheat the oven

Preheat the oven to 180 degrees with heat up and down.

Step 5: Assemble

Place a tablespoon of tomato sauce as a base in a refractory and go forming the different levels or layers: eggplant, tomato, mozzarella cheese, Parmesan cheese, basil and tomato sauce. Repeat until the ingredients are finished.

Step 6: Bake

Enter the refractory to the oven that is at 180 °. Let it bake for 40 minutes.

Step 7: Serve

Once cooked, let it cool; then cut and serve. Enjoy this delicious dish the same day you prepare it or the next day, since its flavor will be more delicious.
