Ingredients

  • 2 lbs of morrillo cut into cubes
  • 1 tablespoon olive oil
  • ½ medium white onion finely chopped
  • 2 stalks of green onion, long or rush finely chopped
  • 2 garlic cloves, finely minced
  • Two medium tomatoes, seeded finely chopped
  • Half a teaspoon of cumin powder
  • One and a half teaspoons of color
  • Salt and pepper to taste
  • 4 medium brown potatoes cut into quarters
  • 4 medium pieces of yucca
  • finely chopped coriander
  • Water

Preparation

Step 1. Cook

The first thing you should do is put oil in a pot and let it heat. Add the big-headed onion and let it brown a little, add the green onion, the garlic and the tomatoes; stir well and let it cook for 5 or 8 minutes. Season with cumin, color, salt and pepper, mix all these ingredients. Now, add the meat and water, depending on how much sauce you want.

Step 2. Boil

Cover the pot and let it boil for 45 minutes over medium high heat. After this time, add the potato and yucca, and cover the pot again to let it cook for an additional 30 minutes. Rectify the seasoning before serving and when you feel that the potato and yucca are soft, you can share this sudadito with your family. Put the cilantro on top to make it look more appetizing.
