It’s time for you to get in the kitchen and kick it out of the stadium! Prepare all the ingredients you need, put yourself in chef mode and follow this typical Colombian recipe that will surely also make your guests eat all the masato you offer them:

Ingredients

  • Two and a half liters of water
  • Half a pound of white rice
  • 32 grams of oat flour or wheat flour
  • 4 cloves
  • 4 cinnamon sticks
  • 300 or 500 grams of sugar (depending on how sweet you want it)

Preparation: how to make rice masato

Step 1. Cook

The first thing you should do is wash the rice with a little water. At the same time, put almost two and a half liters of water (reserve more or less a large cup) in a deep pot. Add the rice and mix very well. Cover the pot and let it cook over medium heat for 25 to 30 minutes. Once it is well cooked, strain it into another container to separate this cooking water. This water is deposited back in the pot to cook it again.

Step 2. Blend

In the cup of water that you reserved, pour the sugar and mix to obtain a sweet liquid. Now, blend the rice in parts and reserve a little. Pour the molasses to hydrate, in addition to the cinnamon. Process until you get a thick liquid. Once you have blended all the parts of the rice, add this content to the remaining rice water from the previous step and add the cloves. Here you must blend about 500 ml of water with the flour and the little bit of rice that you reserved. Add this liquid to the pot you are cooking in and stir everything very well. Let it cook over low heat for about 20 minutes, turning continuously with a wooden spoon.

Step 3. Ferment

Once it has taken a good thickness, remove it from the heat and let it ferment between 1 and 3 days, depending on how strong you like it. Also, the smell of the masato should feel vinegary. Before drinking, stir it and voila, share it with the whole family!
