RECIPE: Chickpea Saute with Chicken and Vegetables

Ingredients

  • Cooked chickpeas 200 g
  • Chicken breast 200g
  • Broccoli little 1
  • Mushrooms (fresh or canned)
  • Italian small squash 1
  • Peppers 1
  • Celery (1 branch)
  • Carrot 1
  • Onion 1
  • Garlic cloves 1
  • Oil (hopefully extra virgin olive oil, but any vegetable or wonder oil you have will be fine)
  • Salt
  • Black pepper

We start with the chickpeas that should be cooked in water and salt for approximately 30 minutes (if you have a pressure cooker, then you should cook them for 15 minutes) or you can buy a box of chickpeas ready to serve.

Then we continue with the chicken.

Cut it into strips (without skin or bones) and marinate it with a clove of minced garlic and a couple of tablespoons of oil.

Meanwhile, we prepare the vegetables.

We clean the carrot, «peel» and cut into thin canes (sticks).

The broccoli should be separated into small florets

Celery should be washed and finely chopped

We clean the pumpkin and cut it with skin into cubes.

Peel the onion and cut it julienne (lengthwise, in pen, in strips).

Wash the paprika and cut into julienne strips.

Preparation:

In a pan you have to sauté the chicken until it is golden brown and reserve it. Add the onion to the same pan and two minutes later the rest of the vegetables. This vegetable mixture should be sautéed for a couple more minutes.

Add the chicken and chickpeas and stir, mixing and sautéing at the same time for another two or three minutes.

When removing the sautéed chickpeas with chicken and vegetables, we will transfer it to a bowl immediately. If you feel like it, you can add a little lemon juice and chopped fresh coriander.
