HOME RECIPE: How to prepare CHICKEN CURRY

The chicken curry is delicious and its flavor is second to none. The grace of this recipe is that despite being very delicious and looking sophisticated, you can prepare it at any time of the week, since it does not take so much time. Plus it’s mostly made up of ingredients you probably already have on hand: chicken, onions, garlic, pantry spices, heavy cream, and canned tomatoes.

How to prepare CHICKEN CURRY

Ingredients

2 tablespoons extra virgin olive oil

1 medium yellow onion, chopped

2 pounds boneless skinless chicken breasts, cut into 1″ pieces

3 garlic cloves minced

1 tablespoon minced ginger

1 1/2 teaspoon paprika

1 1/2 teaspoons ground turmeric

1 1/2 teaspoons ground coriander

1 teaspoon ground cumin

1 serving (15 oz.) crushed tomatoes

1 1/2 cups low-sodium chicken broth

1/2 cup heavy cream

Salt

freshly ground black pepper

Rice or naan, to serve

1 tablespoon. freshly chopped cilantro, to decorate

Preparation

  • In a large pot over medium-high heat, heat the oil. Then add the onion and cook until soft, 5 minutes.
  • Next add the chicken and brown until it is no longer pink, for 5 minutes.
  • Add the garlic and ginger and cook until fragrant, 1 minute.
  • Then add the spices and cook until very fragrant, 1 minute.
  • Add the tomatoes and broth and bring to a simmer.
  • Add the heavy cream and season with salt and pepper.
  • Simmer over low heat until chicken pieces are cooked through and tender, about 15 to 20 minutes.
  • Serve over rice or with naan, garnished with cilantro.
