Ingredients

  • two eggplants
  • 1 zucchini
  • 1 can of tomato (or two cups of tomatoes processed as a sauce)
  • 2 tomatoes
  • A yellow and red bell pepper
  • 1/2 big onion
  • A garlic clove
  • 1 cup of olive oil
  • 1/4 teaspoon of thyme
  • 2 bay leaves
  • 1/4 teaspoon oregano
  • 1 cup of Parmesan cheese
  • Half tablespoon of paprika
  • Salt and pepper

Preparation

Step 1. Saute

Put the olive oil in a pot and preheat over high heat. Add the big-headed onion and garlic chopped into squares and fry them. Add the red and yellow bell peppers, also diced, and finally put the contents of the can of tomato or the blended base that you have made, the bay leaf, oregano, paprika, thyme, and salt and pepper to taste for seasoning. Stir and wait for it to thicken a bit (like a hogao, more or less).

Step 2. Chop

Chop all the vegetables (aubergine, zucchini and tomatoes) into slices, taking care that they have a very similar thickness.

Step 3. Place

Put in an oven-safe container, the tomato base and spices as a bed and start putting the interspersed vegetable slices on top, bordering the entire container. Add a little salt and pepper on top. Finally, put Parmesan cheese on top so that it gratins when it is in the oven.

Step 4. Bake
