How to make seafood paella

Ingredients for the seafood broth

  • 800 g of raw prawns
  • 3 tomatoes cut in quarters
  • 30g olive oil
  • 5 cloves of garlic
  • Parsley
  • 2 liters of water
  • 1 glass of white wine

Ingredients for the rice

  • 160 g of bomba rice or rice for Paella
  • 400 g of the prawn tails used for the broth (previously cleaned)
  • Seafood mix (Sepia, mussels, baby octopus, clams, prawns). You can use the seafood that you like the most
  • 2 tomatoes cut in quarters
  • 2 cloves of garlic
  • Parsley
  • 50g diced onion
  • 30g olive oil
  • 1 glass of white wine

Preparation for the seafood broth

Step 1: Separate the prawns

Separate the heads and body of the prawns. The heads will be used for the broth and the body for the rice.

Step 2: Cook the prawn heads

Put a little olive oil in a large pot and heat over medium to high heat. Once the oil is hot, fry the prawn heads and proceed to crush them with a mortar. After 3 minutes add half a glass of wine and let it cook.

Step 3: Prepare the tomato mixture

Blend the tomatoes, the garlic cloves, the parsley and half a glass of white wine. Proceed to add the mixture to the pot of prawn heads, add the water and salt to taste and let the broth boil for 30 minutes.

Step 4: Rest the seafood broth

Let the broth stand for 30 minutes and after this time, strain it.

Step 5: Preheat the oven

Preheat the oven to 180° Celsius, with heat up and down.

Step 6: Clean the prawns

Clean the body of the prawns very well. Removing the skin and veins.

Step 7: Blend the tomatoes, garlic and parsley

Blend the tomatoes, garlic cloves and parsley together with half a glass of white wine.

Step 8: Saute the Seafood

Place olive oil in the paella pan over low heat and when the oil is hot, sauté the prawns and proceed to remove them. Then do the same process with the other shellfish.

Step 9: Toast the Rice

Saute the onion in the paella pan and proceed to pour the tomato, garlic and parsley mixture until it forms a thick paste. Add the rice and let it toast.

Step 10: Stir the Ingredients

Add two or three cups of broth, prawns and shellfish to the paella pan. Stir all the ingredients very well, until it boils.

Step 11: Bake and Serve the Paella

Take the Paella to the oven and leave it for 15 minutes. Serve and enjoy.
