Ingredients
- 3 medium or large potatoes, cut into small cubes or slices
- 5 eggs
- A big-headed onion cut into feathers
- Half a pound of sliced ham
- Half a pound of double cream cheese in slices
- Salt to taste
- Vegetable oil
Preparation
Step 1. Saute
Heat a frying pan over medium to medium low heat and pour a splash of oil into it. Add the cut potatoes, onion and a good pinch of salt. Stir with the help of a wooden spoon and allow it to fry for about 10 minutes. After this time or when you see that the potato has softened a bit, start crushing it so that it cooks quickly and forms a kind of puree. Leave this sauce on the fire for another 5 minutes.
Step 2. Mix
In a bowl, pour all the eggs and add salt. Mix them just as you do before making the tortilla. In that same bowl, pour the mashed potatoes from the previous step and with the help of the wooden spoon, stir until you obtain a homogeneous mass.
Step 3. Make tortilla
In a pan, hopefully a little deeper, pour a splash of oil and leave it on low. Add a third of the potato mixture that you made in the previous step and spread it over the entire surface of the pan, put slices of cheese and ham to make a kind of bed. Now, pour the rest of the potato dough on top so that it covers and crushes a little so that it takes consistency. Let it cook for about 5 minutes. It will be time to turn it over, so put a large plate underneath and turn the tortilla over; what was on top should now be on the bottom for it to cook in the pan.
