Ingredients
- 960g wheat flour
- 680g of water
- 25 g fresh yeast (or 7 g dry yeast)
- 20g of salt
Homemade bread recipe preparation
Step 1: Dissolve the yeast
Add the yeast to the water and stir very well until dissolved.
Step 2: Prepare the dough
Gradually add the water to the flour and knead with a spatula, until the dough absorbs all the water.
Step 3: Add the salt
Add the salt to the dough and continue kneading with the spatula.
Step 4: Cover the dough
Cover the dough with plastic wrap (vinipel). Let it sit at room temperature for two hours, then put it in the fridge for 24 hours.
Step 5: Separate the dough
Separate the part of the dough you want to use. You can store the rest of the dough in the fridge for up to a week. You can use all the dough the same day, depending on the amount of bread you want to make.
Step 6: Preheat the oven
Put a tray with water to create humidity inside the oven and turn it on to preheat it to 220° centigrade.
Step 7: Shape the dough
On a counter or work table, spread a little wheat flour and fold the dough two or three times to make it stronger; proceed to give it a round shape and let it rest for 40 more minutes.
Step 8: Bake
Place the dough in the oven for 45 – 55 minutes, depending on the oven. Leave the dough until a hard and crispy crust forms.
Step 9: Cut
Let the bread cool a bit, cut it and enjoy.
